Chicken Teriyaki
Ingredients
1 1/4 lbs. chicken (skinless)
1 Tbsp olive oil
1/4 cup low-sodium soy sauce
1/4 cup water
2 Tbsp honey
1 1/2 Tbsp packed light brown sugar
1 Tbsp rice vinegar
1/4 tsp toasted sesame oil
2 tsp peeled and minced ginger
2 tsp peeled and minced garlic (2 cloves)
3 tsp cornstarch
2 cups broccoli or carrots
Sesame seeds and chopped green onions for garnish (optional)
Directions
Whisk together the soy sauce, water, honey, sugar, vinegar, sesame oil, ginger, garlic, cornstarch in a mixing bowl.
Heat olive oil in a pan over medium heat.
Add chicken to pan and brown on all sides (3-4 minutes each side) or until center is 160 degrees.
Add in the broccoli and carrots, cook for 1 minute.
Stir in sauce and continue to cook and stir until the sauce has thickened.
Serve warm with sesame and green onions as garnish.
