Chicken Teriyaki

Ingredients

  • 1 1/4 lbs. chicken (skinless)

  • 1 Tbsp olive oil

  • 1/4 cup low-sodium soy sauce

  • 1/4 cup water

  • 2 Tbsp honey

  • 1 1/2 Tbsp packed light brown sugar

  • 1 Tbsp rice vinegar

  • 1/4 tsp toasted sesame oil

  • 2 tsp peeled and minced ginger

  • 2 tsp peeled and minced garlic (2 cloves)

  • 3 tsp cornstarch

  • 2 cups broccoli or carrots

  • Sesame seeds and chopped green onions for garnish (optional)

Directions

  • Whisk together the soy sauce, water, honey, sugar, vinegar, sesame oil, ginger, garlic, cornstarch in a mixing bowl.

  • Heat olive oil in a pan over medium heat.

  • Add chicken to pan and brown on all sides (3-4 minutes each side) or until center is 160 degrees.

  • Add in the broccoli and carrots, cook for 1 minute.

  • Stir in sauce and continue to cook and stir until the sauce has thickened.

  • Serve warm with sesame and green onions as garnish.
